Tasting Notes
From the vineyards nearby Akrotiri. Overripe white grapes are sundried for a period of 7-15 days. Then destemmed and pressed. The sweet juice ferments slowly for more than 2 months in stained steel tanks at a controlled temperature.
After the end of the fermentation, the naturally sweet wine is moved to oak barrels for maturation for at least 2 years.
Aging potential: Unlimited.
Honeyed, velvety mouth with hints of fig, raisin, caramel and vanilla.Long-lasting aromas of dried apricot, honey, roasted nuts, bitter chocolate and some hints of orange. Long aftertaste which balances between sweetness and razor-sharp acidity.
Food Pairings
Pairs nicely with dark chocolate , fruit tarts, desserts with candy and nuts. Matches also with strong dishes like foie gras and pungent cheeses.
